I made, earlier this afternoon, some lilac simple syrup. Seemed a lovely idea. Lilacs are in season. Simple syrups are insanely quick and easy to make. And floral hints in drinks, punches and mocktails can be quite delicate and wonderful.
Alas, I didn’t think this one through, and while it’s true the lilac flowers infused into the simple syrup, so did the stems the flowers were on. This batch has, unfortunately, a grassy taste to it: not the light floral taste and smell I was hoping for.
I’ll know better next time, and I do plan on a next time.
In the meantime, I’ve made some other simple syrups: ginger, mint, clove, cinnamon and blueberry. I’m looking forward to making simple syrups of basil, hot pepper, maybe sage and definitely some more fruits.
