Corn truffles

Well, that’s rather interesting. Folks be eatin’ this, calling it a delicacy.
I posted this photo on Facebook and was shocked by how many of my friends had tried it, and in many a case, liked it. Kinda like truffles, some said. OK, so that’s one of those “I didn’t know that but now I do” things.

Copied – “Huitlacoche is a type of fungus that infects corn plants and causes a dark, swollen growth on the ears of corn. While it was once seen as a blight on the crop, some farmers in Mexico and the southwestern United States now cultivate it intentionally for its unique flavor and texture.”
